1/4 pound baby root vegetables
such as carrots
radishes
beets and/or sweet potatoes
diced (you can slice the carrots)

stemmed
seeded and diced
½ onion
sliced
½ pound baby Brussels sprouts
halved through the core
½ apple
sliced
Kosher salt and freshly ground black pepper
