INGREDIENTS

2 1/2 cups fresh or frozen mango cubes, chopped in a blender NOT pureed
•
1 medium bell pepper, chopped
•
1 small white onion, chopped
•
2 cups water (I put the water in the blender with the leftover mango still in it)
•
3/4 cup light brown sugar, packed
•
1/3 cup rice vinegar
•
4 tablespoons ketchup
•
3 tablespoons low sodium soy sauce
•
1 (9 ounce) jar mango churney (optional)
•
4 1/2 tablespoons cornstarch
•
6 tablespoons cold water
