4 large bell peppers (any mix of colors you like; red is our favorite)

1 pound lean ground beef (93% lean)
•
1 small yellow onion (diced)
•
2 teaspoons Italian seasoning
•
1 teaspoon ground cumin
•
1 teaspoon garlic powder
•
3/4 teaspoon kosher salt
•
1/4 teaspoon ground black pepper
•
2 cups roughly torn fresh spinach
•
1 15-ounce can fire roasted diced tomatoes with juices
•
1 cup cooked brown rice (farro, quinoa, cauliflower rice, or orzo (if using orzo, undercook it slightly))

1/2 cup shredded sharp cheddar cheese
•
1/2 cup shredded pepper jack cheese (or additional cheddar)
