INGREDIENTS
1 large flank steak (1/2 to 2 pounds)
Salt and pepper, for seasoning the steak before grilling
For the Marinade
1/2 cup extra-virgin olive oil
1/4 cup sherry vinegar
2 tablespoons balsamic vinegar
1/4 cup water
1 tablespoon ketchup
1/2 teaspoon Worcestershire sauce
1 teaspoon honey
1 teaspoon sugar
1/2 red onion, very finely diced
1 pinch cayenne pepper
1 teaspoon chopped fresh rosemary
1/2 teaspoon fresh thyme leaves, chopped
1/2 teaspoon pepper
