"Why this recipe works:This creative pasta sauce recipe puts a Thai twist on shrimp scampi and relies on red curry paste and chili garlic sauce, which are available in the international section of most supermarkets. We prefer the creamy richness of full-fat coconut milk to light coconut milk in this pasta sauce recipe. Thin-strand pastas, such as vermicelli and capellini, match well with this tomato sauce. To prevent overcooking the pasta, we didn’t rely on the cooking instructions on the pasta box; sometimes we needed to shave several minutes off the recommended cooking time for perfectly al dente pasta. We used a liquid measuring cup to retrieve 1/2 cup pasta water from the pot just before draining. If the sauced pasta was too dry, we used the water to achieve the desired consistency...."

3 garlic cloves, minced
2teaspoons red curry paste
1(14-ounce) can coconut milk
1cup low-sodium chicken broth
2tablespoons chili-garlic sauce
1pound large shrimp, peeled and deveined
1/4cup finely chopped fresh cilantro leaves
2tablespoons grated zest and 3 tablespoons juice from 3 limes
