400 mL (14 fl oz) tin light coconut milk
120 g pack baby pak choi, cut into quarters lengthways
2 red peppers, deseeded and sliced
200 g (7oz) baby corn, halved
4 salmon fillets, skinless
2 tbsp. thai green curry paste
finely grated zest and juice 1 lime
2 spring onions, finely sliced
small bunch coriander, chopped
