Thai Chicken 'Mole'

"While I was enjoying experimenting with the Thai spicy peanut sauce last week I realized that it reminded me a lot of a Mexican mole sauce and that thought gave me an idea. Why not..."

INGREDIENTS
1 cup Thai spicy peanut sauce
1/2 cup chicken stock
2 (6 ounce) chicken breasts (boneless and skinless)
1/2 cup jack and cheddar cheese (grated)
1 handful cilantro (chopped)
1 handful roasted peanuts (chopped)
1 birds eye chili (sliced)
