1 big handful of fresh coriander

1 lemongrass stalk roughly chopped

2 kaffir lime leaves

1 little piece of fresh galangal peeled

1 generous pinch of ground coriander

A handful of Thai basil ((or regular basil if you can't get Thai basil))

2 tablespoons of peanut oil
