TGI Fridays copycat Black bean soup Recipe

"The soup has to simmer for about and hour but it really isn't difficult to make. Just put on your timer and wander off for a while...."

INGREDIENTS
* 2 tbsp vegetable oil
* ¾ cup diced white onion
* ¾ cup diced celery
* ½ cup diced carrot
* ¼ cup diced green bell pepper
* 2 tbsp minced garlic
* 4 x 15 oz cans black beans
* 4 cups chicken stock
* 2 tbsp apple cider vinegar
* 2 tspn chili powder
* ½ tspn cayenne pepper
* ½ tspn cumin
* ½ tspn salt
* ¼ tspn concentrated liquid smoke (hickory)
for garnish :
* shredded cheddar/Monterey jack cheese blend
* chopped green onion
