TexMex Cheese & Onion Enchiladas w/Chili Gravy Recipe

"Growing up in Texas I always loved enchiladas. When I moved away I found that the enchiladas were different. Some places even put tomato sauce over them :-|. This gravy recipe is taken from one by Robb Walsh and only slightly altered to try to remove some of the oil. I hope you enjoy as much as we do...."

INGREDIENTS
Chili Gravy
Ingredients:
3 Tbs Canola Oil
1/4 cup flour
1/2 tsp black pepper
1 tsp salt
1-1/2 tsp powdered garlic
2 tsp ground cumin
1/2 tsp dried oregano (Mexican oregano is preferred if it痴 available)
2 T chile powder (either homemade or a dark brand such as Gebhardt痴 or Whole Foods)
2 cups chicken broth (or water)
Cheese Enchiladas
Ingredients:
6 corn tortillas
12 Kraft American 2% Cheese singles (or velveeta for TexMex authenticity)
One medium onion, diced
2 cups chili gravy
