2 teaspoons ground cumin
1 teaspoon ancho chile powder
1/2 teaspoon dried oregano
1/4 teaspoon chipotle chile powder
1 (3-pound) chicken, cooked, shredded or cubed
1 (8-ounce) package cheddar cheese, shredded, divided
