INGREDIENTS
Cooking spray
500 mL (2 cups/16 oz.) penne pasta, cooked according to package directions
500 mL (2 cups) chicken, cooked and chopped
1 can (410 g/14 1/2 oz.) black beans, rinsed and drained
1 can (410 g/14 1/2 oz.) diced tomatoes, with juice
250 mL (1 cup) fresh or frozen corn
Salt and pepper, to taste
1 jar (455 g/16 oz.) salsa verde
175 mL (3/4 cup) sour cream
250 mL (1 cup) shredded pepper jack cheese
125 mL (1/2 cup) shredded Mexican blend cheese*
Lightly crushed tortilla chips (see recipe below)
50 mL (1/4 cup) cilantro, finely chopped
