INGREDIENTS

cup bulghur wheat

1/4 cup freshly squeezed lemon juice

1/4 cup evoo
•
3 1/2 teaspoons salt
•
1 cup chopped fresh mint leaves
•
up chopped flat-leaf parsley - I use two bunches since I love parsley
•
1 cucumber seeded, and medium-diced and peeled
•
2 cups cherry tomatoes, cut in half
•
1 teaspoon freshly ground black pepper
•
ground cumin to taste- less than a teaspoon should be enough
