INGREDIENTS
For the Casserole:
1.5 lbs boneless skinless chicken breasts (cut into bite-sized pieces)
1 tsp olive oil (garlic-infused if desired)
Salt and black pepper (to taste)
32 oz frozen mixed vegetables (Asian-style, unsauced)
3 cups cooked brown rice
For the Teriyaki Sauce:
¾ cup low sodium soy sauce
½ cup water
⅓ cup packed brown sugar
1 tbsp honey
¾ tsp ground ginger
½ tsp minced garlic
For the Slurry:
2 tbsp cornstarch
2 tbsp cold water
Optional: splash of apple cider vinegar to adjust thickness
