INGREDIENTS
2 ⅓ cups (10¼ ounces) unbleached all-purpose flour

• 2 teaspoons baking soda

• ½ teaspoon ground ginger
• ½ teaspoon cinnamon
• ½ teaspoon ground nutmeg
• ¼ teaspoon ground mace
• ¼ teaspoon ground cloves
• 1 cup unsalted butter, room temperature
• 1¼ cups (10 ounces) firmly packed light brown sugar
• 4 large eggs, at room temperature
• 1½ tablespoons grated fresh ginger
• ½ cup molasses
• 1⅓ cups buttermilk
• 1½ cups apple cider
• 1 cup confectioners’ sugar, sifted
• ⅓ cup crystallized ginger, finely chopped
