4 eating apples (Granny Smith is very good or Golden Delicious, if using a small variety, such as Cox’s Orange Pippin, you will need about 6 apples)

125g (4 1/2 oz) caster sugar

100ml (3 1/2 fl oz) water
•
25g (1oz) butter
•
1 egg, beaten
•
Whipped cream, ice cream or whipped cream with a little icing sugar and cinnamon or Calvados, to serve
