INGREDIENTS
3 tablespoons extra-virgin olive oil (EVOO)
4 skinless, boneless chicken breast halves
Salt and pepper
1 red onion, finely chopped
2 cups chicken broth
Grated peel and juice of 2 tangerines
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 - 3 teaspoons hot pepper sauce, to taste
3 carrots, shredded
2 scallions, finely chopped
1 tablespoon curry powder
1 1/2 teaspoons turmeric (about 1/2 palmful)
1 1/2 cups couscous
1/4 cup sliced almonds, toasted
