6 medium guajillo chiles, stemmed and seeded

1/2 teaspoon ground cumin
1 tablespoon canola or vegetable oil
2 cups homemade chicken stock or low-sodium broth
2 pounds boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
1 recipe Basic Tamale Dough
3 dozen dried corn husks, soaked in water for at least 1 hour
