1 1/2 pounds Paula Deen Breakfast Sausage, roll (mild or hot)

1 yellow onion, roughly chopped

3 cloves garlic, minced

1 red pepper, seeded and diced

1 4 1/2 ounce can diced green chiles

1 1/2 cups frozen corn
•
2 10 ounce cans of prepared Enchilada Sauce
•
1 package corn muffin mix (we used Jiffy 8.5 ounce box)
•
1/2 cup cheddar cheese finely grated (reserve 1/4 cup)
•
1/2 cup Pepper Jack cheese, finely grated
•
1/3 cup milk
•
1 egg, beaten
