INGREDIENTS

2 tablespoons unsalted butter

2 tablespoons olive oil

2 shallots, peeled and finely minced

2 cloves garlic, peeled and finely minced

1 pound fresh chanterelle mushrooms, brushed clean (do not wash them with water, or they'll absorb the water and less of the flavorful sauce) and halved or quartered if large
•
1/2 pound fresh tagliatelle, pappardelle, fettuccine, or any other wide, flat fresh egg noodle
•
1/4 cup cream
•
3 tablespoons chopped fresh parsley
•
Pinch of freshly grated nutmeg
•
Fine sea salt, to taste

Freshly ground black pepper, to taste
