1 lb ground beef

1 small onion (diced using the 5" Utility Forged Cultery)

2 - 3 garlic cloves (pressed with Garlic Press)
•
1 small can black olives (sliced using Egg Slicer Plus)
•
3 Tbsp Pampered Pantry Southwestern Seasoning
•
1 (16 ounce) bag frozen corn - I used my corn from garden
•
1 (4 ounce) can diced green chilies
•
1 (15 ounce) can black beans (drained and rinsed)
•
16 oz Pepper Jack cheese or 8 oz Pepper Jack & 8 oz Cheddar, shredded with Coarse Grater or grater blade on Ultimate Mandoline (buying / using block cheese is MUCH better for you as it does not have the preservatives like the pre-shredded)

1 (16 ounce) package frozen tater tots
•
1 (10 ounce) can enchilada sauce
•
optional toppings / garnish: Sour Cream, sliced Green Onions & sliced Jalapeno
