2 cups cooked rice (I used instant rice and cooked it with Chicken Stock instead of water for extra flavor)

2 tablespoons fresh cilantro, chopped finely

1/4 teaspoon black pepper

1/4 teaspoon salt
•
1/2 cup corn
•
1/2-1 cup black beans
•
1/2 cup chicken stock or water
•
1- 14 oz can fire roasted diced tomatoes
•
3 teaspoons or 1/2 packet taco seasoning
