INGREDIENTS
1 piece of swordfish ( 1 1/4 lb)
1 tbsp olive oil
2 tbsp of Ancho Chili Rub (recipe follows)
2 tbsp ancho chili powder
1 tbsp salt
1 tsp black pepper
1 tsp fennel
1 tsp dry mustard
1 tsp cumin
2 tsp dry thyme
Pesto
3 Poblano peppers
1 jalapeno pepper
1/2 C of fresh cilantro (0.5oz)
1/4 C walnuts (1oz)
3 cloves of garlic
2 tbsp lime juice
3/4 C grated parmesan (3.4 oz)
1/2 C olive oil
1 tsp salt
