4 cups all-purpose flour
4 large eggs
1 teaspoon olive oil
1/2 teaspoon salt
Filling
1 cup ricotta cheese
2 cups mashed sweet potato
1/4 cup grated Parmesan cheese
1 egg yolk
1 tablespoon fresh chopped thyme or 1 teaspoon dried leaf thyme
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1 egg, whisked with about 2 teaspoons water for sealing the ravioli
Parmesan cheese, for garnish, optional
Brown Butter Sauce
1/2 cup unsalted butter
1/2 cup coarsely chopped pecans
1 teaspoon chopped fresh thyme leaves or about 1/4 teaspoon dried leaf thyme
dash salt
dash pepper
