2 sweet potatoes (about 1 pound)
1 to 11/2 cups all-purpose flour, plus more for rolling
1 large egg, beaten
1 teaspoon kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon olive oil
2 ounces pancetta, finely diced
1/2 small white onion, finely diced
4 tablespoons (1/2 stick) unsalted butter
3 tablespoons aged balsamic vinegar
2 ounces kale, stemmed and cut into thin ribbons
1 teaspoon chopped fresh sage, plus whole leaves for garnish
