6 hard boiled eggs, cooled and chopped

1 small onion, chopped fine

5 celery ribs, diced small

1 cup carrot, diced smallfor the dressing:

1 and 1/2 cups real mayonnaise (no substitutions)
•
1/2 cup sugar
•
1/4 cup yellow mustard
•
3 Tablespoons sweet & spicy pickle relish (I used the Pain is Good brand)
•
2 Tablespoons apple cider vinegar
•
1 teaspoon celery seed
•
salt and black pepper, to taste
•
paprika, for garnish
