½ cup unrefined coconut oil
1 cup yellow onion, small dice
1 large head red cabbage, cut into quarters, core removed and sliced into ¼ slices
½ cup light brown sugar, packed
2 Bay leaves
1 tablespoon allspice, lightly toasted and crushed
2 tablespoons kosher salt
