1 1/4 pounds sunchokes, scrubbed and cut into 1/2-inch dice

1 (about 1 1/4 pounds) Vidalia or other sweet onion, finely diced

1 (large) red bell pepper, cut into 1/4-inch dice

1/2 cup dry mustard powder
•
1/4 cup all-purpose flour
•
1 quart apple cider vinegar
•
2 cups sugar
•
1 tablespoon turmeric
•
1 teaspoon yellow mustard seeds

1 teaspoon freshly ground pepper
