Summer Vacation By the Sea Calls for a Bowl of Clam Chowder

"Don't forget the oyster crackers!..."

INGREDIENTS
4 slices bacon, chopped
2 tbsp. unsalted butter
1 large yellow onion, chopped
3 stalks celery, chopped
2 garlic cloves, finely chopped
1/3 c. all-purpose flour
2 8 oz. bottles clam juice
1 1/2 c. milk
2 medium Yukon gold potatoes, diced small (about 1 lb.)
1 bay leaf, optional
1 tsp. kosher salt
1 tsp. pepper
2 6.5 oz. cans chopped clams
1/2 c. heavy cream
2 tbsp. chopped fresh parsley or chives
