3 pounds frozen cherries

1/2 cup sugar (or to taste, see notes)

1 Tablespoon cornstarch

generous squeeze of lemon or lime juice

1/8 teaspoon almond extract, optional

1 1/2 cups all purpose flour

1 teaspoon baking powder
•
1/2 teaspoon salt
•
1/2 cup (1 stick) unsalted butter, room temperature
•
1/2 cup white sugar
•
1/2 teaspoon almond extract
•
1/2 teaspoon vanilla extract
•
1 large egg
•
Coarse sugar for sprinkling on top, if desired (I use Sugar in the Raw)
