4 portobello mushrooms
2 tablespoons olive oil
½ yellow onion (finely diced)
2 cloves garlic (minced)
¼ cup red bell pepper (finely diced)
4 ounces cream cheese (softened)
¼ cup sour cream
2 cups chopped cooked chicken (or 14 oz diced artichokes)
5 ounces frozen chopped spinach (thawed and squeezed dry)
1 cup mozzarella cheese (shredded, divided)
½ cup fresh shredded parmesan cheese
½ teaspoon pepper (or to taste)
¼ teaspoon salt (or to taste)
