1 pound 80% lean ground beef
½ yellow onion (chopped)
2 cloves garlic (minced)
1 teaspoon kosher salt
1½ teaspoons chili powder
1 teaspoon ground cumin
¼ teaspoon dried oregano
1 cup cooked white rice
15 ounces tomato sauce ((1 can))
1½ cups shredded mozzarella cheese ((or cheddar - or a mix!))
1 green onion (sliced, for garnish)
