1/2 cup butter, (melted)
3 large eggs, (beaten)
1/4 cup honey
1/2 cup corn ((I used frozen))
1 can diced green chilies with liquid ((small))
1 pound ground beef
1 packet taco seasoning
15 ounces diced tomatoes (with liquid (1 can))
15 ounces black beans, (drained and rinsed (1 can))
1 cup sliced green onions (plus 1-2 tablespoons more for top)
1 cup chopped bell peppers ((green and red, 1/2 cup of each))
1/2 cup roughly chopped cilantro (plus 1-2 tablespoons for top)
1 can black olives, (drained and sliced (small))
8 ounces extra sharp cheddar cheese (shredded and divided into 3 equal parts)
Optional: salsa and sour cream (for garnish)
