INGREDIENTS
4 medium poblano peppers
2 cups shredded Mexican blend cheese (I like Colby & Jack)
1 TB fresh chopped cilantro (extra for garnish)
1 tsp EACH cumin AND chili powder………….…….1 tsp. Kosher salt
2 eggs, whites and yolks separated
1 cup flour………………………………………………..Salsa (jar is fine)

Preheat the broiler. PREP:
(1) Mix the cheese in a small bowl with 1/2 tsp. each cumin and chili powder.
(2) Mix the flour with the remaining cumin, chili powder and salt in a flat, rimmed dish. (3) Put the egg whites in your mixing bowl with whisk attachment and beat until very soft peaks form; add the egg yolks (one at a time) and whisk in. Set these
