4 medium poblano peppers

2 cups shredded Mexican blend cheese (I like Colby & Jack)

1 TB fresh chopped cilantro (extra for garnish)

1 tsp EACH cumin AND chili powder………….…….1 tsp. Kosher salt

2 eggs, whites and yolks separated
•
1 cup flour………………………………………………..Salsa (jar is fine)

Preheat the broiler. PREP:

(1) Mix the cheese in a small bowl with 1/2 tsp. each cumin and chili powder.
