1/2-1 tomato, diced (or half a can of diced tomatoes, drained)

3/4c. corn (drained or if frozen--warmed)
•
1/3 c. cream of cheese*
•
1/3 c. bread crumbs
•
1/3 c. shredded cheese
•
1 green onion, diced
•
Cilantro, salt, pepper, lemon juice for garnish
