zest and juice of one lime

1/4 teaspoon fine sea salt

13 3/4 ounces (3 1/4 cups) unbleached all-purpose flour

1 teaspoon salt

3 tablespoons granulated sugar

2 teaspoons instant yeast (I used SAF Gold, and also recommend Red Star Platinum)

3 tablespoons melted unsalted butter
•
1 cup lukewarm water
•
1/4 cup whole milk
•
1 large egg
•
3/4 cup of the strawberry lime jam for the filling
•
1 egg plus 1 tablespoon water and a pinch of salt for the egg wash
