For the mousse:
2 pounds of fresh strawberries, plus more for garnishing (about 1 cup chopped)
½ cup granulated sugar, divided
pinch of table salt
1¾ teaspoons unflavored gelatin (1 package)
4 ounces cream cheese, cut into 8 pieces, at room temperature
½ cup heavy whipping cream
For the Lemon Whipped Cream:
½ cup heavy whipping cream
2 tablespoons fine granulated sugar
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
