2 teaspoons (6g) agar gelatin
•
3 large egg whites
•
1/4 cup (60g) water
•
1/4 cup (60g) strawberry jello powder
•
2 cups (400g) sugar
•
juice from 1/2 lemon
•
1 tablespoon
•
red food coloring
•
optional
•
confectioner's sugar; for dusting

For Butter Cream:
•
2 cups (453g) unsalted butter
•
3 cups (375g) confectioner's sugar
•
1 teaspoon (5ml) strawberry emulsion or extract
•
For Chocolate Ganache:

1/2 cup (118ml) heavy cream

1 cup (175g) chocolate melts
