Sticky Toffee Banana Cake with Cream Cheese Frosting
INGREDIENTS

Mix together and set aside:
•
2 1/4 cups pureed very ripe banana
•
1 tsp baking soda
•
Cream together well:
•
1/2 cup butter
•
1 1/4 cup firmly packed brown sugar
•
4 tsp vanilla extract
•
Add in and beat well:
•
1/3 cup dark corn syrup (or golden syrup)
•
Beat in, one at a time, beating well after each addition:
•
3 large eggs
•
Add the banana mixture and blend until smooth
•
Sift together:
•
2 1/2 cups all purpose flour
•
2 tsp baking powder
