Sticky Buns ~ Homemade Overnight Caramel Rolls

INGREDIENTS
2 cups whole milk, at room temperature, between 70 and 75 degrees
½ cup granulated sugar
3½ tsp active dry yeast
1 large egg + 1 large egg yolk, slightly beaten
6 tbsp butter, melted and cooled to room temperature
6 cups unbleached, all purpose flour
2 tsp salt
1/2 cup granulated sugar
1/2 cup firmly packed dark brown sugar
1 tsp salt
1/2 lb (2 sticks) salted butter, softened
1/2 cup light corn syrup
2 tsp pure vanilla extract
1/2 cup chopped roasted almonds, or any other nut you like (optional)
7 tbsp salted butter, melted and cooled to room temperature
½ cup granulated sugar
3 tbsp ground cinnamon
