1½ to 2 lbs. chicken thighs (I used 8 bone-in, skin-on thighs, but the original recipe used boneless/skinless)

½ cup soy sauce (if you want this to be gluten-free, make sure you get the wheat-free stuff)
•
¼ cup oil
•
¼ cup vinegar
•
¼ cup bourbon
•
¼ cup brown sugar
•
1 tsp ground ginger
•
1 tbsp minced garlic
•
½ a large onion, diced
