  • 4 skinless and boneless chicken breast halves (6 to 8 ounces each)
  • 1⁄4 cup coarse salt
  • 1⁄4 cup firmly packed dark- brown sugar
  • 12 whole black peppercorns
  • 1 red chili pepper, thinly sliced
  • 2 whole bay leaves
  • 1 cup hot water
  • 3 cups cold water
  • 1 lemon, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves of garlic, peeled, then crushed with the side of a cleaver
