INGREDIENTS

4 cups spring greens or baby spinach
•
2 cups fresh blueberries
•
2 cups fresh strawberry slices
•
2 cups jicama stars
•
4 green onions, chopped
•
crumbled blue cheese, feta or goat cheese (optional)
•
salt and pepper to taste
•
Dressing: 1/2 cup plain greek yogurt (any fat content is fine)
•
1/4 cup real mayonnaise (not Miracle Whip)
•
2 Tablespoons apple cider vinegar OR white vinegar
•
1/4 cup sugar OR honey
•
1 heaping Tablespoon poppyseeds
•
Combine all in a mixing bowl, using a wire whisk, until smooth.
