INGREDIENTS
1 1/4lbs well-marbled chuck beef steak cut into 1 1/2" chunks
3 tablespoons salt (plus more to taste)
1/4 cup olive oil
6 cloves garlic, minced
5 cups beef stock
1 cup chicken stock
1 cup Guinness extra stout
1 cup red wine
2 tablespoons tomato paste
1 tablespoon sugar
1 tablespoon tried thyme
1 tablespoon Worcestershire sauce
3 bay leaves
2 tablespoons butter
3lbs russet potatoes, peeled, and cut into 1/2" pieces
1 large onion, chopped
2 cups carrots cut into 1/2" pieces and peeled
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsle
