Mother Nature has provided the main ingredient for this recipe. Outdoors-men will appreciate this savory meal. I'm not certain where this recipe originated from, but it has always been a favorite for our hunters.

Ingredients

  • 3-4 squirrels
  • butter
  • 2 lg. onions
  • 3 Tbs. cider vinegar
  • pinch thyme
  • salt to taste
  • pepper to taste
  • 12 prunes
  • cornstarch and water (to thicken pan juices)
  • brown rice, cook as directed
  • parsley

How To Make squirrel dinner

  • Step 1
    Clean squirrels and cut into serving pieces. Brown pieces in butter but do not cook through. Put meat in deep oven-safe pan or skillet. Saute onions. Place sauteed onions over meat and add water to cover. Add vinegar, salt, pepper and thyme. Cover and place in oven at 350 degrees for 1 hour or until meat is tender. Turn oven down to 325 degrees. Add prunes. Continue baking 45 minutes longer. Remove from oven. Thicken pan juices, and serve squirrel and gravy with brown rice and parsley.
