INGREDIENTS
2 tablespoons vegetable oil
1/2 cup thinly sliced white or yellow onion
8 ounces cremini (brown button mushrooms, rinsed and thinly sliced)
1 teaspoon minced garlic
1/2 teaspoon all-purpose seasoning salt (like Lawry's)
fresh ground black pepper (to taste)
1 5 ounce package fresh baby spinach (see recipe note if you want to use frozen spinach)
3/4 cup crumbled feta cheese
7 large eggs
1 cup whole milk (can use half-and-half or heavy cream or a combination)
1 tablespoon all-purpose flour
1/4 cup grated Parmesan
1/2 teaspoon salt
fresh ground black pepper (to taste)
1/2 cup shredded Swiss cheese
