INGREDIENTS
For the Pizza Dough:
2 1/4 teaspoons active-dry yeast (one 1/4-ounce envelope)
2 cups warm water (105 to 155 degrees)
5 to 5 1/2 cups unbleached all-purpose flour, plus more for kneading and dusting, preferably organic
2 teaspoons fine sea salt
Extra-virgin olive oil, for bowl
For the Toppings:
4 ounces Gruyere cheese, grated
2 ounces young pecorino cheese, finely grated
8 ounces buffalo mozzarella cheese, torn into 2-inch pieces
6 ounces fresh spinach, stems removed
2 cloves garlic, thinly sliced
Freshly ground black pepper
Extra-virgin olive oil, for drizzling
1 tablespoon thinly sliced fresh mint leaves
Lemon wedges, for serving
