16 oz wheat gnocchi (I used Wegmans brand, but DeLallo, Gia Russa and other brands make it as well)
•
1 lb 95% lean ground beef
•
1 medium onion, diced
•
2 garlic cloves, minced
•
1 cup chunky salsa
•
1 cup reduced sodium beef broth
•
1 cup frozen corn kernels
•
1/4 cup fat free sour cream
•
4 oz 50% reduced fat sharp cheddar cheese, shredded (I used Cabot)
•
Chopped cilantro, to taste (optional)
