INGREDIENTS
1/2 cup low-sodium soy sauce
1 tsp. Asian sesame oil
1-1/2 tsp. granulated sugar
1-1/2 tsp. unseasoned rice vinegar
5 medium scallions, thinly sliced on a diagonal (about 1 cup)
1/2 cup vegetable oil; more for frying, as needed
1 lb. ground pork
1 Tbs. finely chopped fresh ginger (from a 1-inch piece)
2 Tbs. fish sauce
2 tsp. finely chopped Thai bird chile (4 to 5 chiles)
2 Tbs. finely chopped fresh mint
2 Tbs. finely chopped fresh cilantro
30 to 35 round dumpling wrappers
