Chicken:

•1 teaspoon coriander

•1/2 teaspoon sugar

•1/2 cup unsweetened coconut cream (fatty part you skim off the top of coconut milk)

•vegetable oil

Peanut Sauce:
•
•1 (13.5 oz.) can unsweetened coconut milk
•
•1/2 cup natural, creamy peanut butter (with no added emulsifiers)
•
•1/3 cup sugar
•
•1/4 cup water
•
•3 tablespoons Thai red curry paste
•
•2 tablespoons lime juice
•
•1/2 teaspoon salt
•
